Neonette is directly inspired by piquette, a low-alcohol wine made from the​“spent” grape skins of a full-strength wine. In our case, we brew a table beer and ferment on the skins of fruit previously used to make other wild beer.

This Traminette variant was fermented on the pomace of Traminette originally used for Taxon Cycle. Slightly tannic and floral with a bright minerality, low acidity and a bone-dry finish.
